Joshua has built his career at renowned destinations, including the Arizona Biltmore, Gaylord Palms Resort & Convention Center, and Fairmont Chicago, and fulfilled a longtime goal by helping open two restaurants for chef Gordon Ramsay.
Specializing in modern American cuisine, Joshua transforms familiar ingredients into bold, innovative dishes, leading his culinary team with creativity, precision, and a strong commitment to mentorship and memorable guest experiences.
Stephan Lescault

With over 20 years of culinary experience, Stephan has a background working in private country clubs with a focus on modern cuisine and new cooking techniques. He is passionate about quality ingredients, consistency, and creating memorable dining experiences for guests.

The Confluence Hotel
Our History
Located in the heart of Hastings, Minnesota, The Confluence Hotel honors the city’s rich history and connection to the rivers that shaped it. The name Confluence comes from the meeting of the Mississippi and St. Croix Rivers—a historic junction that played a major role in Hastings’ early growth as a river town in the early 1900s.
The building originally housed the H.D. Hudson Manufacturing Company, a factory that produced agricultural sprayers and equipment shipped around the world from 1909 to 2005. After standing as a symbol of innovation for a century, the property was carefully restored and transformed into The Confluence Hotel, preserving its industrial character while creating a welcoming modern space.
Missi’s, the hotel’s signature restaurant, takes its name from the mighty Mississippi River. The menu reflects the region’s agricultural roots and features seasonal dishes inspired by Midwestern flavors.
Together, The Confluence and Missi’s reflect the heart of Hastings—where the past inspires the present.
